On Tuesday, August 13, 2024, Walailak University, in collaboration with the Huata Phan Subdistrict Learning Promotion Center and the Huata Phan Subdistrict Administrative Organization, provided free access on food security knowledge to food producer by organizing a hands-on workshop on processing pork into Thai pork jerky and shredded pork jerky. The workshop aimed to enhance the skills and knowledge required for processing pork products for safe and hygienic household consumption with good taste. The knowledge gained from this workshop could be applied as a supplementary profession, adding value to the primary occupation of pig farming within the community. The workshop was held at the Huata Phan Subdistrict Administrative Organization’s multi-purpose pavilion in Huata Phan Subdistrict, Tha Sala District, Nakhon Si Thammarat Province, and was attended by approximately 15 participants.
The event featured a community expert in pork processing from the Klai Subdistrict Learning Promotion Center network, who shared her knowledge and expertise on the recipes for making Thai pork jerky and shredded pork jerky. The workshop was well-received by participants, many of whom expressed interest in trying the recipes at home. The group plans to develop these learned recipes into processed products to add value to the pork produced within the community. Currently, the community mainly sells whole pigs and fresh cuts of pork. By acquiring new processing skills from this workshop, the group aims to create new opportunities and expand their market channels, thereby increasing the confidence of farmers in their pig farming profession and ensuring food security through diverse food options for both household consumption and commercial sales, leading to sustainable income generation within the community.
